2 cups boiling water
3 tbsp. instant espresso powder
3⁄4 cups plus 1 1⁄2 tbsp. sugar, divided
2 oz. Frangelico Liquor
4 egg yolks
1⁄3 cup Marsala wine
2 1⁄2 cups mascarpone cheese
1 1⁄2 cup cold heavy cream 30-40 Ladyfingers
1⁄4 tsp. cinnamon
Cocoa powder for dusting
In large bowl mix together water, espresso powder,1 1⁄2tbsp. of sugar and Frangelico until sugar is dissolved.
In separate metal bowl(over a double boiler with lightly simmering water), beat egg yolks, Marsala and remaining sugar until mixture triples in volume (about 6-8 minutes). Remove bowl from heat and beat in mascarpone cheese until just combined.
In a separate bowl using an electric mixer, whisk the heavy cream until it forms stiff peaks, add cinnamon. Lightly fold mascarpone mix into heavy cream.
In a square baking dish, one by one dip Ladyfingers in the coffee mix and lay flat on the bottom. Spread mascarpone mixture over the Ladyfingers then add another layer of Ladyfingers followed by another layer of mascarpone mix. Continue until layers reach top of pan and spread mix to even out surface.
Dust cocoa powder over top to cover. Chill for 6-8 hours then dust again with another layer of cocoa powder.
