Holy Guacamoly (Topped with Cheese!)

Whether you’re hosting a small fiesta or major Game Day party, get ready with this fan favorite Guacamole recipe with pepitas topped with Cotija cheese!Yes, we said it - CHEESE! Cotija is a cow’s milk cheese that originated from Mexico. Cojita cheese is basically like feta but gives it more of a salty bite. Try out this recipe, we guarantee you will score with this one!

  • 6 Hass Avocados, halved and pitted
  • 1 T. Fresh Lime Juice
  • 1/2 tsp. Salt
  • 1/2 tsp. Cumin
  • 1/4 tsp. Cayenne Pepper
  • 1/2 cup. Onion, finely diced
  • 2 ea. Roma Tomato, seeded and diced
  • 1 ea. Garlic Clove, minced
  • 1 T. Fresh Cilantro, chopped
  • 1/2 ea. Jalapeño pepper, minced
  • 1/4 cup. Shelled Pepitas (pumpkin seeds), toasted
  • 1/4 cup. Cojita or Colby Jack Cheese, crumbled
  • Place the avocado pulp and lime juice in a large mixing bowl and toss to combine.
  • Add the salt, cumin and cayenne.
  • Then, mash using a potato masher.
  • Add the onions, tomatoes, garlic, cilantro and Jalapeño, and stir to combine.
  • Place guacamole in a serving bowl and top with toasted pepitas and cheese.
  • Serve as desired, with chips, tortillas, etc.
