Naturally Better Bean Salad
- 12 oz. SE Grocers Naturally Better Organic Garbanzo Beans, drained
- 6 oz. SE Grocers Naturally Better Organic Dark Red Kidney Beans, drained
- 6 oz. SE Grocers Naturally Better Organic Cut Green Beans, drained
- 6 oz. jarred roasted red peppers, drained
- 3 Roma tomatoes, diced
- ½ cup cucumber, seeded and diced
- 1 tbsp. olive oil
- 2 tbsp. fresh lemon juice
- 1/3 cup fresh parsley, chopped
- 1 tbsp. fresh basil, finely chopped
- 1 tbsp chives, minced
- 1 tsp dried oregano
- 1 shallot, minced fine
- 2 cloves garlic, minced
- 1/3 cup white wine vinegar
- 1 tsp lemon zest
- 1 tsp salt
- 2 tsp whole cracked pepper
- In a medium bowl combine herbs, spices, lemon juice, vinegar and olive oil; whisk
- Add remaining ingredients and toss to combine.
- Cover and let stand for 1 hour under refrigeration.
