Naturally Better Bean Salad

  • 12 oz. SE Grocers Naturally Better Organic Garbanzo Beans, drained
  • 6 oz. SE Grocers Naturally Better Organic Dark Red Kidney Beans, drained
  • 6 oz. SE Grocers Naturally Better Organic Cut Green Beans, drained
  • 6 oz. jarred roasted red peppers, drained
  • 3 Roma tomatoes, diced
  • ½ cup cucumber, seeded and diced
  • 1 tbsp. olive oil
  • 2 tbsp. fresh lemon juice
  • 1/3 cup fresh parsley, chopped
  • 1 tbsp. fresh basil, finely chopped
  • 1 tbsp chives, minced
  • 1 tsp dried oregano
  • 1 shallot, minced fine
  • 2 cloves garlic, minced
  • 1/3 cup white wine vinegar
  • 1 tsp lemon zest
  • 1 tsp salt
  • 2 tsp whole cracked pepper
  • In a medium bowl combine herbs, spices, lemon juice, vinegar and olive oil; whisk
  • Add remaining ingredients and toss to combine.
  • Cover and let stand for 1 hour under refrigeration.
